Each week we're introducing a new speaker from our 2022 - 23 food & drink Trend Summit taking place this November. The fourth speaker to be confirmed is Ross Lusted, Owner & Chef, Woodcut Restaurant, Sydney.
Ross joins this year's event to discuss and explore his approach to the elemental cooking of food over open fire with wood and charcoal, a technique we've seen continue to gain momentum over the past 12 months and one we've covered at length on Trendhub.
After a successful career in a range of award winning restaurants and hotels, including roles as Executive Chef of Rockpool, Park Hyatt Sydney's Harbour Kitchen & Bar and Mezza9 in Singapore, Ross returned back home to Australia to open his first restaurant - The Bridge Room before opening Woodcut with his wife, providing Sydneysiders with a unique dining experience that celebrates Australian produce and cooking with wood, charcoal and steam.
