London's hub of creative cuisine and fresh produce Borough Market is set to see an exciting new addition thanks to a collaboration between two big name chefs, from Kiln and Sabor, Greek restaurant Oma.
Nick Molyviatis, former head chef of Soho's Thai-inspired Kiln, joins forces with Jorge Paredes, ex-executive chef at Spanish tapas restaurant Sabor, to take over the former Rabot 1745 space and showcase their take on Greek cuisine with a raw bar and open-fire kitchen.
Details of the new eatery are still thin on the ground ahead of launching proper this spring, but what we do know is that bread play a central role on the menu led by head baker Eyal Schwartz. Main menu items that have been released so far also include Cornish squid brushed with garlic, za'atar and sumac, Lamb belly and caramelised date molasses skewers and Brown crab borek.
