What was the industry talking about in this month 5, 10, 15 or even 20 years ago?
Each month, we'll be taking a look back through two decades of food and beverage trend forecasting, revisiting what was emerging, growing, and peaking during this month in years gone by.

- 2010 - Eataly opened their first store outside of Italy in New York near Madison Square Park, in partnership with Mario Batali and Joe Bastianich, creating the largest artisanal Italian food and wine marketplace in the world.
- 2011 - Heinz Squeeze and Stir soups were new on our supermarket shelves, looking a teeny bit like a squeezy yoghurt, as the company tried to tackle the rising price of metal packaging. These soups were thick concentrates that could be added to boiling water, came in four varieties; Cream of Tomato, Minestrone, Mediterranean Vegetables and Cream of Tomato with Basil, at a cost of 59p each.
- 2015 - FlapJacked, a Colorado-based company that produces nutritious high-protein pancakes and baking mixes, expanded its portfolio to include Mighty Muffins. Glutenfree, non-GMO, protein-fortified and added probiotics meant that these muffins ticked all the health trends of the moment. The best thing? These were conveniently microwaveable, meaning you could go from no muffin, to muffin in 2 minutes flat.
- 2021 - Pía León, the chef-owner of Kjolle and co-owner of Central in Lima (Peru), was announced World's Best Female Chef 2021 in the annual award given by the World's 50 Best Restaurants organisers. León was previously named Latin America's Best Female Chef (2018); that was the same year she opened her first solo endeavour Kjolle (pronounced KOY-ay) which would go on to receive the Highest New Entry Award on Latin America's 50 Best Restaurants 2019 list (No.21). She was also head chef at Central when it was named 'Best Restaurant in Latin America' (2015-2017) and still oversees the ground-breaking restaurant alongside partner Virgilio Martinez.
