1. Next Gen Dairy – The dairy industry is being disrupted by pioneering tech advancements. Headline-hitting precision fermentation, for instance, is introducing animal-free dairy products to the market. And look out also for 'hybrid' alternatives for those looking to reduce their dairy intake - aka flexi-dairy-anism! Furthermore, major innovations in plant-based production bring us closer to replicating 'the real thing'. Think smoky plant-based cheddar oozing from cheese toasties, chive and shallot flavoured cream cheese slathered on fresh bagels, and perhaps even blue cheese alts that really stink… in a good way!

2. Extra Indulgent – There's always room to indulge, and what better place to start than in the rich and creamy? Think whole burrata cheese, topping fresh salads and fruits… pizza combining not four but eight different cheeses… French toast fried with rich parmesan… or perhaps you prefer the sweeter side of things with cinnamon bun flavoured butter! And if that doesn't sound indulgent enough, how about a stracciatella plate? Yes, we mean a whole plate overflowing with stracciatella topped with spicy 'nduja, sweet honey, and rich olive oil. Yes please!

3. Big, Bold Flavour – Similarly to the desire for indulgence, consumers opt for big, bold flavours. Middle Eastern influence remains a consumer favourite, with abundant spices such as sumac, za'atar and cardamom flavouring our dairy. Furthermore, a rise in' techniques for flavour' trends – in the guise of smoked labneh, Pinot Gris-soaked cheeses and more. Umami flavours remain significant, too, with bone marrow, anchovies and seaweed inclusions – and, unsurprisingly, spicy flavours continue to get hotter and hotter! Smoked ghost pepper Cheddar cheese, anyone?
