Chef Simon Rogan Set To Take L'Enclume To Sydney

Revered British restaurant L'Enclume, of no less than three Michelin Stars, is set for a Sydney residency this year as chef Simon Rogan swaps the UK summer for Australian winter in what is L'Enclume's first experience outside of the UK.

Packaging up all the facets that make the Cumbrian-based acclaimed eatery, Rogan and some of his team will set up shop at Bathers' Pavilion on Balmoral Beach for five weeks, from 19th July to 20th August. Don't worry though, the original L'Enclume won't be closing its doors during this time too.

Rogan will oversea each and every service of the temporary residence which will welcome up to 80 diners. He'll do so alongside Executive Chef of Roganic and Aulis London and Hong Kong, Oli Marlow, and Sam Ward, Managing Director of Simon Rogan restaurants globally. This leadership team will also be supported by a team of chefs and front of house from the UK, as well as a sommelier too.

Talking of the upcoming Sydney residency, Rogan said: "The Sydney residency marks a big milestone for us as we enter our third decade and our boundary-pushing team could not be more excited to share our strong sustainability ethos and serve up some of our favourite L'Enclume dishes using the outstanding local ingredients unique to New South Wales and Australia.

"Produce is our driving force and Australia has some of the best in the world. We are looking forward to experimenting with ingredients we haven't had the opportunity to work with before and cooking them simply to highlight their natural taste, texture and fragrance and extract maximum flavour and interest."
