The popular vegetable-focused small plates restaurant Root in Bristol, from chef Josh Eggleton, is to open a second location in Wells, Somerset, celebrating local produce.
The new venue is set to be led by head chef Rob Howell and his wife Meg, sourcing local prodcuce from surrounding farms, markets and dairies. The ethos of what's being served is very much in line with what you find at the original Root restaurant which opened back in 2017 and has proved very popular ever since. Howell himself is also well versed in the offering having led the kitchen at Root Bristol since it's opening, leading the influence on seasonal ingredients.
Despite the focus on vegetables, Root is not a fully plant-based venue as there are also a selection of meat and fish plates too. Restaurant owners Eggleton, also of The Pony Group, Bristol Beer Factory and School of Food; together with Luke Hasell (Story Butchers, Valleyfest) together boast a wealth of experience in the catering and restaurant business and will continue to guide the Howells through the new opening.
A statement about the new opening said: "We feel incredibly fortunate to be in such a fantastic location in the heart of the city, with views of the cathedral. We feel a great weight of responsibility to get this right and offer something special in Wells.
"Head Chef Rob was born, raised, and began his career in Wells. After over fifteen years experience working abroad and across the country, he made the decision to settle back home in Wells with his wife and manager Meg."
