Chef and restauranteur Josh Niland has partnered with Edition Hotels to lead at the new signature restaurant at the Singapore Edition hotel.
Niland, a former speaker at our 2019 Trend Summit, is set to take the helm of his first restaurant outside of Australia with Edition Hotels with this new ethically-sourced seafood concept eatery. His current CV boasts time spent working at the UK's three Michelin starred The Fat Duck before returning to Australia to open his first restaurant in 2016 - Saint Peter, now a multi-award winning Australian fish eatery. From there, Niland opened his next venue, The Fish Butchery, a retail market concept selling sustainable fish species.
He garnered much international attention when developing a unique and groundbreaking approach to dry ageing fish, a pioneering idea to utilise the entire fish; inside and out. Sharing his concepts on paper, Niland has also launched a number of books including The Whole Fish Cookbook, Take One Fish, and more recently Fish Butchery, in August 2023.
The new restaurant at the Singapore Edition, focuses on a circular economy between both restaurant and lobby bar to minimise waste. As expected, the restaurant menu focuses on fish, cut to order.
