
With clocks finally going forward and Spring upon us, the TFP team has been busy looking back at the cooler Winter months we're (hopefully) leaving behind! That's right folks, our seasonwatching Winter 2025 report is live on the trendhub.

- Layered Drinks: It wasn't only our clothing that was being layered over the winter, as the overarching aesthetic for hot and cold beverages saw contrasting colours, flavours and textures stacked in kaleidoscopic splendour by the cupful. Borrowing from a long-standing trend in East and Southeast Asian drinks kiosk culture, layering brings with it not only visual impact but increasingly adventurous flavour pairings, too. Coconut water-matcha cream cold brew, anyone?
- Core Blighty!: Colder, darker nights prompted a renewed interest in hyper comforting, sometimes downright retro British fare. Pub grub favourites like meat pies and Scotch eggs reached their zenith in the hands of passionate chefs, while puddings of all kinds – from Sussex pond to pease – received a gourmet glow-up, finding a home on supermarket shelves and Michelin menus alike.
- Big Fish, Little Fish: People often forget that seafood can be a staple of winter menus, with many species coming into their prime during the season. This year, seafood of all sizes has been making a splash – from fresh and dried roe topping sandwiches, salads and seasonal veg, to a penchant for serving whole fish in all of their plate-filling glory; even sea vegetables get in on the act, adding their trademark salinity to drinks, dips and desserts.
