Meet the speakers joining us at our Food & Drink Trends Summit

What will shape the future of food and drink? From shifting consumer behaviours and emerging culinary influences to the next generation of food businesses, our 2027/28 Food & Drink Trends Summit will bring together leading voices from across the industry to explore the ideas, opportunities and challenges shaping what's next.

We're delighted to share more about the speakers joining us for the day, with an exciting programme of insight, inspiration and discussion covering everything from changing consumer expectations to the flavours, cuisines and concepts set to influence the year ahead.

Exploring the behaviours shaping the future of food and drink

Amelia Boothman, Dr Michael Bloomfield and Charles Banks

Together, Amelia, Michael and Charles will explore the behavioural and cultural influences underpinning our 2027/28 food and beverage predictions.

From how people are responding to uncertainty and finding pleasure, to redefining value and taking greater ownership of their wellbeing, the session will examine the deeper shifts in attitudes and behaviours influencing what, how and why we eat and drink.

Charles Banks and Emma Watsham

Charles will bring our 2027/28 trends framework to life, exploring the defining areas of change emerging on the foresight horizon and the forces shaping the future of food and drink in a time of extraordinary transformation.

The culinary trends and flavours to watch

Sophie Mancuso, Stephanie Sowden and Charles Banks

Joining forces, Charles, Sophie and Stephanie will take us on a journey through the culinary and gastronomic trends set to shape the year ahead.

From evolving food philosophies and cooking techniques to the cuisines, ingredients and flavours capturing our imagination, they'll explore how creativity, culture and changing consumer appetites are influencing what we cook, eat and experience.

Expect fresh perspectives, inspiring ideas and plenty of food for thought.

Turning food ideas into successful businesses

George Taylor, Frive

How are changing expectations around health, convenience and personalisation reshaping the food and drink landscape?

George will explore what it really takes to turn a personal conviction into a successful, scaled food business, sharing lessons from his own founder journey. From spotting a gap in the market to scaling a purpose-led proposition, he'll reflect on building a brand that aims to change the way people eat every day.

Mursal Saiq, Cue Point London

Culture, migration and identity are playing an increasingly important role in shaping food and the way we experience it.

Mursal will explore these influences and ask who gets to decide what the future of food looks like. Drawing on her journey building Cue Point and championing Afghan food and hospitality, she'll share insights into bringing an underrepresented cuisine to new audiences, celebrating culture and building a business that challenges perceptions.

Amelia Christie-Miller, Bold Bean Co

How do you turn one of the most overlooked ingredients in our kitchens into something people genuinely love to eat?

Amelia will explore the opportunity to change not just perceptions, but everyday eating habits, sharing lessons from building Bold Bean Co. From the power of storytelling and the role of recipes and culinary inspiration to the opportunity for food brands, retailers and hospitality businesses to put beans at the heart of how we eat in the future, this session will explore how brands can inspire meaningful change.

Reimagining the future of hospitality

Ben Tish, Cubitt House

The British pub has long held a special place in our food culture, but how is it evolving to meet changing expectations?

Ben will explore what it takes to preserve the things we love about the traditional pub while adapting to the way people want to eat today.

Drawing on his experience leading food at Cubitt House, he'll discuss the influence of Mediterranean cooking, the changing role of the chef and what the future might look like for a new generation of dining pubs.
