New Openings June 2023

Each month we publish a round-up of the most exciting new openings across food and drink around the world over on the tfp trendhub. Here are some of the highlights from June 2023 from foodwatching and drinkswatching. The highlights list, in no particular order, features venues from Los Angeles, Las Vegas, Hong Kong, Sydney, London and more.

Funke, Los Angeles
Chef Evan Funke has opened his namesake in Beverly Hills, describing it as a place that describes where he is right now as a chef, person, mentor and teacher. The space is vast, stretching over three floors with a glass cube in the centre of it all, described by Funke as the "pasta lab". It's here that his team are making bespoke pieces of pasta by hand, as they would have done 150 years ago. As for the menu, it's a showcase of the techniques he has learnt in remote corners of Italy over the past 15 years. The main focus is on pasta though there are other dishes too including seasonal veggies, whole-roasted fish and steaks.

Vista Bar, Hong Kong
Vista has opened its penthouse bar in collaboration with Campari and is complete with majestic views of the Hong Kong skyline. Vista Bar boasts a cocktail series specially created by Livorno-born bar director Lorenzo Coppola. Among the new signature cocktails from the "Eight Shades of Red" series is the Peking (One) Duck which is a mix of duck fat, tamarind-washed Montelobos Espadin mescal, blood orange, cassis and green apple yoghurt mousse. Hasta la Vista is another playful option, complete with magnifying glass that allows you to look through the view as you sip.

Cathedrale, Las Vegas
Aria Resort and Casino has opened the doors to its newest restaurant, Cathedrale, an import from NYC's East Village. It is dark and sultry with low lighting, shining metal accents, rich blues and brown leather tables. The menu draws on the flavours of France, Spain, Italy and Greece with luxury ingredients, like caviar and black truffle, appearing intermittently - think the Omelette with Kaluga caviar and creme fraiche. Other dishes include lobster arrabbiata with VSOP cognac and a prime-aged ribeye with rotisserie leeks and a tangy green sauce.

Ruby, My Dear, Brisbane
Brisbane has joined the growing ranks of cities embracing Japanese-inspired listening bars with the opening of Ruby, My Dear. The first thing that grabs you as you enter is the shiny bronze speakers that are nestled amongst the vinyl on the shelves that surround the tables. Visitors can sit back with one of the Japanese influenced cocktails such as the Yardbird made with Roku gin, lychee, peach and lemon and enjoy the music with DJs playing four nights a week. There's also a bunch of Japanese beer alongside local craft beers and a selection of wines. And to accompany them is an izakaya style menu ranging from light dishes to more hearty ones.

20 Berkeley, London
The group behind the recently opened Humo have opened the doors to 20 Berkeley where the focus is seasonal British. They have brought in Executive Chef Ben Orpwood (ex Gordon Ramsay Group, Caprice Holdings) who has built up relationships with UK suppliers from around the country to ensure he is getting the very best of what's on offer. That translates into Cornish Mylor prawns which are only available for a few weeks. Other dishes include Dressed Portland Bill crab with apple & foraged sea herbs and overnight braised Herdwick lamb shoulder with pommes mousseline. As for the space itself, you'll feel as if you have stepped into an English manor house.

Allpress Espresso, Singapore
New Zealand's famed Allpress Espresso has opened as a pop-up Singapore's Duxton Road. Running for six months, it is bringing the Kiwi's infamous coffee directly to the city. That includes the quintessential Flat White, Long Black and Cappuccino. If you are after something a little bit different try the Iced Latte Float, made with a double espresso, fresh milk and a serving of Allpress Dulcey Latte ice cream. There's also a small dessert menu with highlights including the Coffee Basque Cheesecake and Affogato Sundae with two shots of espresso poured over vanilla and Allpress Mocha ice cream and topped with a freshly baked canelé and crispy florentine.
