Noma Alumnus To Open Modern Polish Restaurant in London

Polish chef Damian Wawrzyniak, a former student at four time World's Best Restaurant Noma, is set to open a new Modern Polish Restaurant in Clapham, London, this May. Named Jan 2.0, a rebrand of current venue Jan, the 60 seater restaurant will feature an open kitchen, a rabata grill, and will see a modern take on Polish classics.

Wawrzyniak told online publication Eater: "My ambition is to bring real flavours. We'll focus on brining methods, curing, and preserving ingredients harvested in the summer to extend the season for colder months."

Wawrzyniak moved to the UK in 2005 and currently owns modern-European restaurant House of Feasts in Peterborough.
