Having launched in mid-November on Upper St, Islington and focusing on skilfully made specialist cocktails, Pisco Embassy will be London’s first late-night Pisco bar.
The 12 strong cocktail menu will offer twists on classics such as the Pisco Embassy Punch and Chicha Sour alongside bespoke creations and homemade infusions from Head bartender José Francisco-Modonese (previously sommelier at Sushisamba).
Hailing from Lima in Peru, José is as passionate as he is knowledgeable about his country’s national spirit, the grape brandy Pisco. Spending at least one month a year in Peru during the peak harvesting and distilling time for Pisco, José visits the vineyards, Bodegas and specialised Pisco bars to find inspiration and exchange new ideas and concepts to bring back to London.
José’s homemade Pisco infusions use ingredients such as physalis, kafir leaves, orange and citron. Showcased in beautiful glass jars, the infusions will add a unique flavour to classic cocktails and create entirely new tastes. Pisco Embassy will showcase rare and unusual Piscos from Peru, introducing Londoners to the quality and variety on offer. The signature cocktails, which range from £9.50- £13.00, include:
Machu Picchu Nights - Pisco infused with Shisho leaves, shaken with lemon juice, red basil syrup, mixed berry purée and pressed apple juice
Oso Paddington - Pisco infused with orange peel, cinnamon syrup, fresh orange juice and a touch of limejuice
Pisco Embassy Punch - Pisco mixed with fresh pineapple juice and a touch of lemon
Chicha Sour - Pisco with Peruvian purple corn syrup and lemon juice
With a licence until 5am and a Bolivian DJ playing a mix of commercial and South American music, the 100 capacity venue is the perfect place to head to after dinner to drink and dance in a laid back, fun Latin atmosphere.
Entry to Pisco Embassy is free from midnight till 2am, after this time a membership will be required which is available to those aged 23 and over, at £10. Located on Upper Street, Islington, Comedor Bar & Grill is a South American restaurant and bar, which specialises in cuts of beef, fish and other meats.
