Plant-Based Cheese Brand Julienne Bruno Launches Mozzafiore Pearls

Award-winning naturally plant-based cheese brand JULIENNE BRUNO has launched the world's first Mozzafiore Pearls exclusively at Whole Foods Market in London.

Mozzafiore Pearls are created using traditional cheese-making techniques, but rather than dairy, use soya to obtain a springy, soft texture with a creamy, yet salty achieved through their fermentation process. With no artificial aromas and flavourings, nut-free and coeliac-friendly, providing a great option for those suffering with allergies. Mozzafiore Pearls are perfect for salads, pasta, pizza, sandwiches and can also be marinated with extra virgin olive oil and fresh herbs.

JULIENNE BRUNO features an impressive team behind the scenes, with includes founder Katalan, previously concept developer for Alan Yau MBE and Co-Founder of deep location tech brand Pointr; Head of Product Development Albert Adria, an industry trailblazer and owner of multiple Michelin star awards including at El Bulli where he was previously Head of Creativity at El Bulli; Head of Food Chi San, previously Head of Food for Alan Yau Projects, starting with Head Chef at Wagamama (1992) and following through to all projects such as Hakkasan, Busaba; and Board Advisor Alan Yau MBE (renowned for founding numerous ventures in gastronomy such as Hakkasan, Wagamama, Busaba Eathai and Park Chinois, as well as Advisor Jan Zijderveld who boasts a 30 year career in Unilever.

Talking about the product, Katalan adds: "We named it Mozzafiore Pearls out of respect for Italian cheesemaking heritage, not to replicate mozzarella but to continue the tradition of creativity it represents. Mozzarella pearls were once a new idea themselves. 'Fiore,' meaning bloom in Italian, reflects the product's delicate nature, while 'Mozza' honours the craft of hand-stretching curds, a technique mirrored in our batch-made process. Together, the name celebrates a continuation of cheese craftsmanship and its rich tradition."
