Held over five days this October, the international trade exhibition SIAL welcomed over 7,000 exhibitors and over 150,00 visitors to Paris. We dusted off our comfy shoes and joined the crowds in order to spot some of the most interesting and innovative trends on display. The future of our planet and improving our own personal health dominated trends along with naturally imparting as much flavour into food as possible!

SIAL is described as the world's largest food innovation exhibition, and this year's show didn't disappoint. A few of the main takeaways from this year's exhibition were:

Organic. Shining across all categories at SIAL, fitting the trend of consumers being ever more concerned about sustainability, health and the quality of their products.

Fermented in drinks. These have been rising in popularity in line with the increase in awareness and thoughts towards gut health. Dairy kefir, water kefir, kombucha, fermented soy and fermented dairy.
