The Pearson Room, based in Canary Wharf, are delighted to announce that Tim Tolley has taken up the position as Head Chef at the restaurant on Canada Square. Formerly of Vong NYC and Vong London, Tolley has devised a menu of mouth-watering fresh salads, gourmet sandwiches, a variety of fresh seafood dishes and innovative international dishes. American inspired dishes include The Manhattan seafood chowder, Cobb Salad, The Salt beef Reuben sandwich, New Orleans shrimp & grits and the New York cheesecake with blueberry compote.
Commenting on the new menu Tim who has over 27 years of experience said: “The menu has been designed to create flavours through simple cooking, whilst also provides a choice of well-balanced options that can be delivered with speed in mind to busy city workers.”
He added: “While our emphasis is on the speed aspect of the menu we are also committed to providing a relaxed experience where the natural flavours of the ingredients speak for themselves.”
Tolley, originally from Virginia, has travelled all over the world to experience different cuisines and cultures. But it was during his time growing up in America that Tim really began to experiment with his cooking.
Speaking about the launch of the new menu General Manager Nicolas Mori said: “We are delighted to be re- launching the menu with an exciting array of dishes which we believe
cater for a diverse range of tastes and work for the time poor workers of Canary Wharf.”
The Pearson Room is open Monday to Friday from 7am to midnight. It is closed on Saturday and Sunday but is available for private hire.
