June Over The Years - Exploring Our 18 Years In Food & Beverage Trends EBook

Spotlighting the trends and events that have occurred over the years in the month of June, as featured in our new 18 Years In Food & Beverage Trends EBook. Check out five highlights from between 2006 and 2023.

thefoodpeople was established in 2005 rooted in our purpose to shift the future of food and drink by inspiring and informing people, business and institutions to harness the power of trends and foresight. Why do we do what we do? Well, we believe that food & drink connects us all, by working with our community, industry and our collaborators, positive impact in food & drink can shape a better future for all.

Since then a lot has changed across the food and beverage landscape, change that we've looked to capture in our latest edition of the EBook, 18 Years In Food & Beverage Trends. We look at what events, people, culture, regulations, technologies, and products defined these years, as well as the changes and impact on these for the future.

Here are some of the highlights captured from month of June between 2006 and 2023.

June 2010 - Edible flowers shot to the fore in 2010 as our flavours became increasingly floral throughout 2010, particularly in our cakes and cocktails. Going beyond a few petals as a garnish, edible flowers were recognised with the intensity and richness of flavour they could offer. The Calorie Restriction Diet hit the US, with the plan encouraging people to sit on the threshold of starvation mode in the hope that optimum nutrients can be gained from the fewest number of calories. Whilst we saw the release of the unusual product Sushi on a Stick too.

June 2013 - This was the year we saw Chai seeds become the seed of choice, largely due to their well publicised health benefits and nutritional profile: rich in fibre, omega 3s, antioxidants, iron and calcium. These little powerhouses were appearing in our food and drinks, our breads, our snack bars and even our beauty products. We saw British consumers demanding speciality and adventurous breads much more than ever, creating a quiet shift in high street bakeries as we returned to crafted processes. Whilst in this month the industry was inspired heavily by The Great Gatsby film, with themes seeping into food and drink - even a Gatsby-inspired afternoon tea at Harvey Nic's.

June 2014 - This month saw London's Gymkhana win the National Restaurant Awards, taking the title from 2013 winner The Hand & Flowers. Attica was voted Australia's best restaurant for the second year running. East Hampton Gourmet Foods won the Outstanding New Product award at the Sofi Awards for its Lentil Rice Crispbread, Sesame Pink Salt. Whilst, away from all the awards being dished out, we saw sensory dining take off.

June 2017 - The latest Insta-success story was Cloud Eggs in 2017, building on the existing Social media hype around runny egg yolks. Attention now turned to these lighter, fluffy eggs, that offer a slightly different texture, but the same nutritional density. Keeping it social, the rather bloomin' lovely Donut Flowers seemed to spread like wildfire across our social media platforms, after Mark Israel, the owner of New York's Doughnut Plant, created them for Mother's Day. While the first colourless coffee drink was produced by London-based company CLR CFF too.

June 2021 - We saw BK go vegan in 2021, as Burger King announced it was opening its first completely vegan restaurant in Cologne, Germany. For a limited time only, BK collaborated with plant based meat company The Vegetarian Butchers to create a meat-free menu. Elsewhere, consumers couldn't seem to get enough of all things nostalgic, and the latest retro goodie to find its way back into favour was.... Jelly! And finally, this month Cadbury announced it would be launching Caramilk bars into the UK, after the chocolate treat created a cult frenzy when it introduced in Australia.
