Graze For Days: Snacking options proved to be a big hit with Easter eaters as cafés, bakeries, QSRs and supermarket shelves stocked with grazing options to fill any hunger gap from breakfast through to supper. All the seasonal favourites were there… with a snack-y, craveable twist of course. Think hot cross bun bacon butties, bunny bao buns,seasonal Scotch eggs and charcuterie boards; perfect for those who didn't want to waste a single second of the busy bank holiday period!
  2. Going Global: Cuisine influences from across the world have been playing out on Easter plates. Lamb, in particular, became a cultural chameleon as the season's star ingredient took on spices, sauces and presentation cues from the Levant to Lahore. Slow-roasted shoulder with harissa, lamb prosciutto, miso-glazed leg, Greek, Mexican and Chinese-derived flavours all appeared across retail and foodservice, showing not only the versatility of lamb as an ingredient but growing appetite for Easter exploration through food.
  3. Hot Crossovers: The hot cross bun has become a standout format of the season, playing host to endless flavour twists (Doritos-inspired cheesy jalapeño HCB, anyone?), format mash-ups (if you haven't seen Sydney's viral 'hot cross croissant sofa', you need to take a look!) and itself acting as a flavour inspiration for everything from cream liqueur to candied nuts. Meanwhile, across café culture, the HCB latte is Spring's answer to the PSL (pumpkin spice latte), turning up in espresso, matcha, hojicha, chai and chocolate form - complete with a signature sprinkle 'cross' to keep things fully on brand!
