We take a look at thefoodpeople's own Scott Fraser's input to this month's Trend Summit where he'll be talking us through an inspirational Vietnamese-themed lunch. Senior Trends Analyst Scott will be leaning on his culinary heritage from working in some of the world's best restaurants to take us through an interactive session.
We take a look at the two dishes Scott will be cooking on the day.
Bánh xèo – crisp savoury Vietnamese crêpes
Vietnamese food is super-hot at the moment and bánh xèo is a great example of a quick dish from the area. Essentially it is a thin crêpe made with rice flour, coconut milk and turmeric - filled with pork, prawns and bean sprouts. Bánh xèo is food meant to be eaten with your hands. The suggested way is to take a salad leaf and add a bite-sized portion of the pancake, and some herbs. Wrap this up, dip into nuoc cham sauce and gobble it down.
Spiced sesame Oolong latte
This is a super simple Autumn energy boosting drink. Taking leads from the ever-popular Pumpkin Spice Latte, this drink takes influence from the Middle east in the shape of tahini, rose and cardamom. And instead of coffee we are using Oolong tea as it is often used to help boost mental awareness. We are keeping the drink vegan by using pea 'milk' and finishing the drink with a super sassy sesame brûlée top!
