Quaglino's, the upmarket brasserie-style restaurant in the heart of London's St. James area, has recently launched a new concept based around sustainability and seasonality - A Sustainable Supper Club. Comprising of four courses featuring local, seasonal and organic farm-to-fork produce paired with cocktails from the A Taste of Sustainability menu.
Having launched its A Science of Sustainability menu back in September 2018, the new Supper Club concept and cocktail menu is the next showcase in the series, as the restaurant continues to show its commitment to sustainability in its offerings.
The Supper Club evening looks to bring together like-minded individuals together for an evening of discussion about agriculture, sustainability and of course an array of delicious food brought to you by newly appointed Executive Head Chef Nuno Goncalves.
The menu looks like this:
English "surplus" celeriac velouté, pickled apple, burnt apple puree, wild chickweed
... followed by ...
Truffled goat's cheese mousse, gingerbread, beetroot and radish textures, toasted hazelnuts, raspberry and hazelnut dressing
... or ...
Line caught Cornish mackerel, Devon Crab, Avocado cream, pink grapefruit and cucumber
... followed by ...
Roast stone bass, Cauliflower puree, Orange braised chicory, golden raisins, capers, sugared pine nuts and curry infused first press rapeseed oil
... or ...
Bubble and squeak, roast butternut squash puree, cavolo nero, salt baked beetroot, roast almond froth
... followed by ...
Textures of Rhubarb, Blood Orange Sorbet and Nyetimber Jelly
... or ...
