This year's Good Food Guide awards in Australia saw chef Clinton McIver of Amaru awarded his third hat, making him one of the most respected chefs in the country - a chef we've been tracking since 2019.
Having cut his teeth as sous chef at Vue de Monde, McIver first started to make a name for himself at Clayton Bowls Club - a somewhat odd venue to discover a fine dining experience but McIver and his partner Ali Rolim Correa managed it. It was in 2015 when he moved on from the Bowls Club to the Amaru restaurant in Armdale, heading the kitchen at this small intimate spot serving Contemporary Australian Cuisine.
Writing on the Amaru Instagram page, the restaurant commented on the 3 hats - Words can't describe how we all feel today. To receive our 3 hats in the 2024 Good Food Australia is simply a dream come true. Thank you to our incredible team of hard working individuals and to everyone who has been a part of our journey so far. Huge thank you to all of the team at Good Food Australia. The best is yet to come!
Back in 2019, we profiled Clinton McIver as one of the most exciting up and coming chefs on the scene in Australia. At the time, his restaurant Amaru had just one 2 hats in the 2019 Good Food Guide, a venue with just 35 seats and one that had just been voted best restaurant in Victoria. tfp trendhub subscribers can read the full profile on McIver which includes an interview with himself covering the inspiration behind Amaru, his cooking techniques and wider inspirations too.
