Chef Clément Chauvin, of Canberra's renowned Les Bistronomes restaurant, has created a celebration of French Mushrooms for Good Food Month 2021. This exclusive six-course set menu is a showcase of a variety of mushrooms and will come with a full description of textures, aroma and locale of the internationally-sourced fungi.
Canberra Good Food Month pays respect to the traditional owners, past and present of the Ngunnawal country. Good Food Month returns to Canberra this March for its seventh year, with four spectacular feature events and multiple Friends of Good Food Month dining experiences taking place across the state.
The menu at Les Bistronomes is as follows:
Amuse-bouche
Le Cigar de la Mort
Jerusalem artichoke cigar filled with Paris mushroom (champignon de Paris) and black trumpet (Trompette de la mort) duxelles
Soup
Le Cappucino de la Forêt
Morels (Morille) consommé, topped with umami foam, mushroom powder served with Comté toasties
Entrée
Saumon farcie aux Girolles
Cured salmon sphere, stuffed with sautéed Girolles and potato salad, lightly smoked at the table
Main
Les Cèpes en Pithivier
cèpes, chicken breast and foie gras pithivier, roast chicken jus with side of Paris mash
Pre-dessert
Fried mushroom ice-cream and meringues

Un petit coing Truffé
Truffled poached quince, caramel Blanc-Mange and buttermilk cloud
