Josh Niland and his wife Julie have recently launched the next phase of their blooming pandemic-founded takeaway business: Fish Butchery Delivered. The new concept will see Sydney residents able to order restaurant-quality fish and seafood to their home, including Fish Butchery sausages and charcuterie such as Murray Cod bacon and salmon pastrami.
There's also ready-made dinners such as fish pie and Yellowfin tuna lasagna; and make-at home meal kits – including a tuna cheeseburger four-pack. Orders can be placed a maximum of one week in advance to keep the menu unique reactive to the season's offerings. "If we receive some beautiful King George Whiting from Bruce Collis in Corner Inlet we want to have them butterflied, crumbed and online that day for our customers," explained Josh.
Back in 2019 we welcomed Josh Niland to our annual Trend Summit via video link from Australia, then a physical event prior to the pandemic. At the time, Josh spoke of his multi-award winning Australian fish eatery Saint Peter, in Paddington, Sydney. You can watch back the latest round of keynotes and discussions from last November's Online Trend Summit on our YouTube channel here.
