
The lines between flavour profiles have been blurring for some time now, with 'swavoury' becoming more and more mainstream. And now there's another category being influenced by this boundary-blurring approach. Cue, a new wave of… Savoury Coffee.
Ingredients from spicy gochujang (Korean chilli paste) to umami-rich miso are being used to reimagine classic coffee drinks with a spicy or savoury(ish) twist. And that's not all! Nutty coffees are given new depth with the addition of tahini (sesame paste); whilst the ubiquitous PSL (Pumpkin Spiced Latte) makes way for the likes of mulled coffee, cardamom brews or Mexican café de olla.
And of course, we can't forget about salt and butter! Yup, that's right. The addition of salt in coffee drinks has transcended far beyond salted caramel; think Vietnamese salted coffee or iced mochas with salted cream foam. Meanwhile butter is employed in coffee for everything from keto-credentials to smooth, velvety mouthfeel.
