Le Gratin, New York
A little part of France has arrived at The Beekman Hotel thanks to chef Daniel Boulud's latest venture. Le Gratin is inspired by the lively ambiance and warm service of the bouchons and bistros in Boulud's hometown of Lyon. He has created a place where he hopes friends will gather and relax and enjoy classic Lyonnais specialities. These include the Quenelle de Brochett au Gratin (pike dumpling, gruyere-mushroom bechamel, Salade Lyonnaise (frisee salad, chicken liver, crispy power bellow) and rotating monthly specials.

Blinker, Manchester
Manchester's newest cocktail bar has opened its doors on Spring Gardens. Blinker is the new venture from Dan Berger who brings with him a wealth of experience from his time at the London hotel The Ned. With the main focus on classic cocktails, the menu is split into three - one dedicated martini section, another focused on old fashions and a third that changes seasonally to champion four local ingredients. This month it is all about mint, pomegranate, rhubarb and nectarine.

Only Coffee Project
Samuel Lee and Quinton Ng aren't new to the coffee scene - they're the duo behind the recently relocated Double Cross Cafe. Keeping the old space, they have created the Only Coffee Project, which as the name suggests, is just about coffee. It only serves full-cream, skim and Oatly oat milk. There are no chai lattes and definitely no decaf. They are currently the only Australian stockist of Sey Coffee, a Brooklyn, New York-based roastery considered one of the best in the US. Simply it is all about education with the plan to showcase a rotating roaster of high-quality roasters.

Arcade, London
Back in July 2019, Arcade Food Theatre opened its doors only to be thwarted by the pandemic. Thanks to JKS Restaurants (Gymkhana and Trishna) it's back with a vengeance under the name Arcade. Luke Farrell, a chef who has his own nursery garden in Ryewater, has launched Plaza Khao Gaeng which is all about Southern Thai cuisine and Bebek! Bebek! which is based on an Indonesian hawker stand with dishes like traditional smoked duck and chicken. There are a further eight restaurants offering Nepalese cuisine, burgers, Indian and sushi.

Koi, Hong Kong
Koi is a contemporary fusion bistro that is the new venture from Japanese masterchef Terufumi Mihara. It is next door to his first concept, the fine dining Teppanyaki Mihara. This time he is serving "Wa Modern" Japanese fusion cuisine with each dish getting the same exquisite preparation techniques that he uses to create his dishes next door. The menu is inspired by his travels, some of which have continental influences such as marinated akami tuna and angel hair pasta and rock shrimp tempura with sweet chilli sauce.
