New Openings August 2023

Each month we publish a round-up of the most exciting new openings across food and drink around the world over on the tfp trendhub. Here are some of the highlights from August 2023, including venues from Dubai, Hong Kong, Paris and more.

Bottega Di Carna, Singapore
Bottega di Carna, the new concept from Netflix's Chef Table star and famed butcher Dario Cecchini, has opened its doors at Mondrian Singapore. Like his other restaurants in Italy, Cecchini follows his philosophy of respecting animals and using every part of the animal well, describing it as an ethical imperative. The restaurant comprises an expansive dining area that allows natural sunlight to enter during the day and an open kitchen to showcase the chefs at work. Here they are creating modern Italian dishes such as artichoke with Parmigiano, goats' cheese and Acacia honey and Chianti crudo, coated in smoked paprika, olive and lemon.

Cravan, Paris
LMVH-owned wine and spirits brand Möet Hennessy has unveiled Cravan, a cocktail bar that celebrates the 'French art de vivre' and culture of Paris. The new spot, found in Saint-Germain-des-Près, spans five floors in a 17th-century building where guests can experience interiors inspired by art, cinema, fashion and literature. There are three cocktail bars to discover as well as a curated Rizzoli bookstore. Guests can indulge in iconic tipples such as Dom Perignon, Veuve Cliquot, Armand de Brignac and Möet & Chandon amongst others or choose from a menu of cocktails, devised by cocktail expert Franck Audox who is the founder and artistic director.

Eggslut, Hong Kong
Eggslut, the Californian fast food chain, has opened its first store in Causeway Bay's Fashion Walk. Founded as a food truck by Alvin Cailan in 2011, the cult brand has expanded to five locations across the US as well as international outposts in cities including London, Tokyo and Singapore. Hong Kong's menu stays true to its origins with favourites like the Fairfax and Gaucho sandwiches featuring. There are also sides like truffle hash browns and the "Slut" where a glass jar is filled with coddled eggs atop mashed potato with salt and chives. The all-important free-range eggs are sourced from New Zealand whilst the brioche buns are made locally by Bakehouse.

Odd Culture, Melbourne
The folk behind the award-winning Sydney bar Odd Culture, the hybrid bottle shop and natural wine and wild ale bar, have opened the doors to a second venue, this time in Melbourne. It celebrates all things fizz, fermentation and funk with an eclectic mix of natural wines, wild ales and a seasonal cocktail menu that showcases local produce. Their signature is the 'Sour Negroni', made from a blend of in-house acidified vermouth with kriek (cherry lambic) but there are others to choose from too including the koji-fermented appletinis and in-house fermented tepache.

Atrangi, Dubai
Indian celebrity chef Ritu Dalmia, best known for her restaurants Diva in Delhi and Cittamani in Milan, has opened Atrangi at the Jumeirah Al Qasr Hotel. The new restaurant's focus is Indian cuisine though Dalmia explains she is using her expertise in Italian cooking to create a menu that she describes as "honest". Rather than use many spices in her dishes, she wants to use just one that will really stand out and allow her diners to really taste what they are eating. She is also taking inspiration from the different communities that exist in India, from the Sindhis to the Kayasthas. Dishes include her version of Indian street food chole bhature (spiced chickpeas with puffy fermented bread) and duck galaway.

Outset Coffee, San Francisco
Outset Coffee has opened its doors in the Mission and, if you enjoy creative coffee, this is the place for you. Head of coffee, Heng Qui, explains the idea to start an Asian-inspired coffee shop came up a year ago and so he spent most of the past year researching by visiting major Asian cities. The menu is split into four sections: Fruit lattes which use fresh fruits as a natural sweetener for coffee; neo-Americanos, substituting water with citrus juice; coffee mocktails; and hot specialities which blend steamed tea and milk with coffee. Drinks include a toasted banana latte, a durian latte and an orange & grapefruit juice filled sunset americano.
