Paquera Mezcal, producers of the Mexican spirit, has unveiled two new limited edition ancestral mezcal flavours, one of which is made using Wagyu beef.
The brand's new mezcal is made using open-range Tajima Wagyu from the Arrington Ranch in Twin Bridges, Montana. The product page describes the drink, saying This mezcal harmonizes the spirit of Oaxaca with opulent and tender grace of Yellowstone Wagyu.
The production method is said to see the Wagyu beef 'twice wrapped in twine and suspended within the clay pots early in the distillation process, dripping meat flavours into the pots to add to the flavour and finish.
The new Wagyu-infused option is acknowledged as an ancestral mezcal, meaning that the drink must be made by using traditional methods only, without the use of modern equipment or stainless steel.
