Rare Restaurants, the group behind the Gaucho and M restaurant brands, is set to offer carbon neutral steaks at all their restaurants. The new zero-carbon spiral cut fillet tail steak, called the Lomo Verde, will be available at every restaurant of the group.
This follows plans announced towards the end of 2021 by Gaucho to open Scotland's most sustainable steak restaurant, set to open early this year. The restaurant was announced as to be serving only carbon neutral steaks and this new move to introduce this as a new menu item across all restaurants in the group seems to take the concept one step further than just Scotland.
As well as the new steak offering, the popular steak restaurant chain has also launched a new plant-based menu for Veganuary which features dishes such as radish ceviche with avocado, corn, shallot and tortilla; corn empanada and humita, basil and tomato sauce; and baked butternut squash with burnt onion, black bean and corn salsa.
