British QSR bakery chain Greggs has taken the unexpected step into the world of fine dining with the launch of its pop-up Bistro Greggs at Fenwick Food Hall in Newcastle.
The new opening, a first in Greggs' 225-year history, sees an 80-cover fine dining experience come to life serving up exquisite versions of the brand's most popular menu items paired with wines and a signature cocktail from Fenwick Food Hall - the Pink Jammie Fizz created by cocktail experts, Mother Mercy.
The menu has been designed in collaboration with Fenwick's executive chef Mark Reid and will see interpretations of the high street menu enhanced through Fenwick culinary flair and gastronomic excellence.
Quoted on the Fenwick website, chef Mark Reid said: "Greggs in itself is an everyday treat and the goal was to try and elevate that treat further, verging on the decadent and indulgent with a nod to Christmas.
"Our main inspiration for the menu was taking the recognisable, classic Greggs products and re-imaging them. Transforming Greggs caramel shortbread into an Eton Mess or replacing a Beef Wellington with the Greggs Steak Bake and accompanying it with truffled dauphinoise potatoes and green beans with almonds."
Bistro Greggs will be an all-day dining destination, serving a limited-edition breakfast, brunch and lunch menus from a Parisian-inspired designed space on the department store's first floor, where guests will walk through a lattice-style pergola front entrance in a playful nod to Greggs' signature pastry designs.
