Big-hitting flavours and ingredients play an integral role in the appeal of traditional Indonesian cuisine – from spicy sambals to fragrant shrimp paste, which are used to amp up everything from nasi goreng (fragrant fried rice) to laksa (cult status noodle soup). So too do the comforting, crowd-pleasing, budget friendly credentials of staple dishes like satay and soto (chicken soup).

But if you think it's all about traditional dishes – guess again. Because there's also a new wave of multi-cuisine and fusion twists, reimagining Indonesian flavours and formats. Think beef rendang samosas, vol-au-vents filled with laksa shrimp, or hot dogs finished with peanut satay and sambal relish. And to wash it all down?
